10 Easy, Delicious, Healthy-ish, Get-in-my-Mouth Sandwiches

When I tell people I studied Nutritional Science in college I often get asked: What are some of your favorite recipes? Here's the truth--if you're looking for something gourmet, you should ask my mom. No really, she's amazing and I hope to reach that level some day. But today is not that day! Don't get me wrong, I'm a fan. But I am a simple cook, made simpler by having a baby attached to my hip. My solution? Sandwiches. I love me a mean sandwich. Easy, delicious, and mostly-healthy. What's not to love?

So, here's another list of all those I've been compiling. This one is a list of sandwiches that have made lunches and dinners SUPER easy in the Porter household. May they make your evenings less stressful and your tummies happy.

1. MEDITERRANEAN MONDAY: Caprese Naan-wich

BREAD: Naan bread (or flat bread of your choice)

SPREAD: Pesto

INSIDES:

Tomato -- thick slices

Fresh basil

Fresh Mozarella

Balsamic Vinager

Grated parm

Pepper

HINTS: Warm the Naan bread prior to assembly by covering with microwaving for 30 seconds or so. If dry or hard, cover with a damp paper towel. Also, use toothpicks to keep it all together.

2. TACO TUESDAY: Albequerque Green Chili Bakes

BREAD:Whole wheat rolls or Hawaiian Rolls

SPREAD: None needed. Maybe a little butter, light mayo, or green chile salsa if you are obsessed

INSIDES:

Turkey

Swiss

Green Chiles

HINTS: Wrap each sandwich individually in tin foil and bake at 350 for 5-10 minutes. Texas Caviar and tortilla chips make a great side dish!

3. WAFFLE WEDNESDAY: Waffle Grilled Cheese

BREAD: Whole wheat waffles

SPREAD: None needed -- dip it in some tomato soup!

INSIDES:

Cheddar cheese

Colby jack cheese

Ham

Runny egg

HINTS: Undercook the egg so its gooey if you plan to dip in Tomato Soup, or runny if not. (So ignore my all-the-way cooked egg above por favor.) After assembling the sandwich, melt in skillet for a "puffier" sandwich, or grill on panini press for the slimmer toasty version.

4. THAI THURSDAY: Spicey Thai Peanut Wraps

BREAD: Whole wheat tortilla or spinach wrap (I like the Ole' brand)

SPREAD: Thai Peanut Sauce -- we love House of Tsang Bangkok Spicey Peanut Sauce

INSIDES:

Thai Skillet Mixture. Could include: cubed chicken, potatoes, broccoli, cauliflower, carrots, sweet potato, bell peppers...whatever you like to put in your favorite thai dish

Red cabbage

Lettuce

Slivered carrots

Crushed peanuts

Red onion

HINTS: This one is a great way to use your Thai leftovers. Use your own favorite Thai recipe and turn it into a wrap by adding the raw ingredients above. If you want to use our recipe: simply cook chicken in skillet, add veggies, then add House of Tsang Bangkok Spicey Peanut Sauce sauce. Serve it over hot brown rice. Whabam--I just gave you two meal ideas in one.

5. FRIDAY PIZZA NIGHT: Pesto Chicken Panini

BREAD: Whole wheat bread or small whole wheat pizza crusts if you're really precocious

SPREAD: Pesto and Marinara (optional)

INSIDES:

Baked pesto chicken strips

Sundried tomatoes or regular tomatoes

Shredded mozarella

HINTS: I like to bake a whole bunch of chicken breasts at once and then freeze in individual baggies the ones I'm not using immediately, which makes meals like this SUPER simple. Simply defrost one chicken breast, shred or cut into smaller pieces, heat in skillet with pesto sauce and Voilah! You have some hot, saucy chicken ready for this knock-out panini.

6. WHATEVER SATURDAYS: The Connor Sandwich

BREAD: Whole wheat bread

SPREAD: Pesto on one side, Hummus on the other

INSIDES:

Sliced tomato

Sliced cucumber

Fresh mozzarella

Sprouts (I didn't have sprouts so I used red cabbage)

Spinach

HINTS: This sandwich is inspired by my brother-in-law, Connor, who introduced it to the Porter family when he joined the club a few years ago. Actually this sandwich only slightly resembles the sandwich he introduced to us. It's evolved so much that I think that every person in the family makes it a little differently. So the same goes to you too! Make it your own! But make this version too...because it's amazing.

7. SOUPER+SALAD+SAMMY SUNDAY: The Honey Cran

BREAD: Ciabatta roll, multi-grain if possible

SPREAD: Honey mustard on one side, Cranberry sauce on the other

INSIDES:

Honey Ham or Turkey...or both

Cheddar

HINTS: This sandwich is super simple and super DELICIOUS! Bake the sandwich at 350 for 5 minutes for extra warm and toasty goodness.

BONUS SAMMY'S

8. California Club

BREAD: Whole Wheat

SPREAD: Spicy Mustard and Guac

INSIDES:

Turkey and ham

Avocado (that's what makes it Californian, duh!)

Muenster Cheese

Tomato

Spinach or Lettuce

HINTS: It's a sandwich. Just make it and devour it.

9. PB+Beverything

BREAD: Whole wheat or Multi-grain

SPREAD: Peanut butter (or other nut butter of choice)

INSIDES: (options)

Banana--except for this one, it's mandatory

Apple thinly sliced

Craisins/Raisins

Crushed cashews, almonds, pecans

Graham

Honey

Cinnamon

HINTS: This is another one of those sandwiches that you should totally make your own. Go crazy! If peanut butter and pickles is your thing--I'm not stopping you. If you prefer an OFS (open-faced sandwich) because you have bread to filling issues, like myself, you are in good company my friend.

Also--try this with a panini press or sandwich maker, you won't be sorry.

10. Kat's Chicken Salad

BREAD: Whole wheat bread, roll, or croissant if you know what isn't good for you but don't care because it's delicious

SPREAD: Chicken salad base

INSIDES:

Sweeter options: Blueberries, raspberries, grapes, diced apple, craisins

Savory options: cucumber, celery, zucchini, sliced almonds, pepper, shredded spinach

And I always like adding more Spinach on top. It's good for you.

HINTS: For the chicken salad base, you can use either low-sodium canned chicken or shred up some of that baked chicken you cooked up earlier in the week (see #5). Then use Plain Greek yogurt for more savory, low-sugar Vanilla for a more sweet base. Mix-in whatever other fillings you like. Personally I like a sweet/savory combo--plain greek yogurt with blueberries, raspberries, zucchini, almonds, and shredded spinach. NOM NOM NOM!
